2 Tbs peanut or vegetable oil
1 lb boneless chicken, white or dark meat
2 Tbs cornstarch
2 Tbs sesame seeds
2-3 cups cooked rice
3 Tbs soy sauce
1 Tbs water
1/2 Tbs sesame oil
1 1/2 Tbs brown sugar
1 Tbs rice vinegar
1 tsp fresh ground ginger, minced
1 clove garlic, minced
1 Tbs cornstarch
Cut boneless chicken into one inch or bite sized pieces.
In a small bowl, mix together all sauce ingredients. Mix well, and set aside.
In another small bowl, beat egg and and cornstarch.
Heat peanut or vegetable oil in a wok.
Toss the chicken in the egg and cornstarch mixture.
Add chicken and egg mixture into the wok.
Cook chicken for 8-10 minutes until golden brown, stirring occasionally.
Pour the sauce mixture over the chicken. Toss chicken to thoroughly coat
it with sauce.
