Pork Stir Fry Recipe
Description: Try this recipe on family or friends. It is quick and
easy to make, and destined to become a favorite of your chinese recipe
collection.
Yield: 4 servings
Ingredients:

1 lb. pork tenderloin
-
1 Tablespoon grated orange rind
-
3/4 cup orange juice
-
1 tablespoon cornstarch
-
3 Tablespoons soy sauce
-
1/3 cup corn syrup
-
1/4 teaspoon ground ginger
-
2 Tablespoons vegetable oil
-
2 large carrots, peeled, and cut diagonally
-
2 celery stalks, cut diagonally
-
1/2 cup cashew nuts
-
steamed rice
Directions:

Slice tenderloin into thin strips, set aside.

Combine orange rind, orange juice, cornstarch, soy sauce, corn syrup and
ground ginger.

In a wok, or large skillet, heat 1 Tablespoon vegetable oil on medium heat.

Add carrots and celery. Stir fry for 3 minutes.

Remove vegetables, set aside.

Pour second Tablespoon of vegetable oil into the wok.

Add pork and stir fry for 3-4 minutes.

Return vegetables to the wok.

Add orange juice mixture and cashews.
-
Cook, stirring constantly until sauce is thickened.

Serve hot over a bed of rice.
